Our Famous Managers are very hands-on in both the front of the house and back of the house responsibilities. Assist General Manager with assuring compliance with documentation requirements of Sarbanes-Oxley  Food Preparation and Production Ensure that all menu items are made according to recipe and presented in a Famous manner. Utilize food production and inventory tools available to support this responsibility. Monitor completed food product to ensure taste, temperature and presentation are correct and that items are not over or under produced. Conduct Line Checks and Rib Checks in accordance with established procedure. Ensure Prep Lists are followed. Maintain a working knowledge of all recipes, products and production procedures. Ensure established standards of food and alcohol safety are maintained. Purchase food products within established guidelines. Oversee correct receipt, storage and handling of food products to ensure quality and freshness at all times. Maintain an appropriate inventory of products. Ensure food storage and storage areas are compliant with local Health Codes. Guests and Associate Respond to Guest comments and criticism within 24 hours in a constructive and positive manner. Educate and empower Associates to act in a similar manner. Ensure a safe and secure work and dining environment for Associates and Guests. Ensures Associates follow all safety and uniform guidelines. Carry out supervisory responsibilities in accordance with all applicable laws and regulations. Demonstrate high ethical standards at all times, adhering to all standards laid out in the Company’s Code of Ethics policy, Standards of Operations, etc. Conduct associate meeting as assigned by General Manager. Ensure monthly Safety Committee Meetings are conducted effectively and that open items are attended to timely. Ensure Associates receive timely and meaningful performance reviews. May assist developing other managers as directed by the General Manager.  Staffing and Building Great Team Assist and support staffing the restaurant with Famous Associates who value Guest service and are committed to high standards of performance. Orient all new hires utilizing Company handbooks and support materials. Provide training and recognition to Associates and actively work to maintain a team-oriented environment. Work within established guidelines and policies for training and development of Associates.  Administration and Auditing Assist the General Manager in forecasting and generating the restaurant annual budget. Assist in the monthly accounting processes including analysis of monthly operating statements, and research reasons for variances. Responsible to support the overall restaurant budgeted sales and profit goals. Responsible to maintain labor efficiency ratios to ensure appropriate levels of Guest service while remaining cost effective. Follow established guidelines for staff scheduling. Responsible for restaurant P&L performance with a focus on assigned areas of direct responsibility. Supervise the opening and closing of the restaurant when the General Manager is not present or as directed. Ensure all operational reports and procedures such as Productivity by Shift, Line Checks, Waste by Shift, Open and Close checklists and Server Checkouts are completed according to established guidelines. Ensure all reports, documentation and other information required by the Support Center departments are completed and submitted in a timely manner (ie SOX requirements).
